CANNES-2+CANNES-8+CANNES-7+The 67th edition of the Cannes Film Festival started with a big craze. I arrived so excited in the second week to evolve in its fame and glory. Its always a rare moment for rich and famous to get together and roll out their flamboyant possessions at the “Big Screen Kingdom” of French Riviera.  I was ready to experience it like never before. This is a perfect place for the cinema world to meet to recognize go-getters, discover new talents, masterpieces, show best fashion, jewels, and glamour, while working the tapis rouge. Its all about striking camera ready precision of this “red legendary moment”.  Film icons, actors and hard working show business entourage shine and sparkle catching the attention of millions of spectators while competing for the Palm D’ore trophy.

You better be on your best behavior and clean cut if you want to be swept away.  Talent agents, directors, publicists, journalists, sponsors and cameras are all watching. Competition is fierce with A-list attendance and fresh talent immersion. This 67th edition should be one to remember with big names like Gilles Jacob, and Thierry Fremaux have picked up the year’s best movies, including brand new works by the Olivier Dahan, Olivier Assayas, David Cronenberg, Xavier Dolan, Michel Hazanavicious, Mike Leigh, Ken Loach among others. Particularly this year Cannes pays a special tribute to the director of Pulp Fiction Quentin Tarantino. As always he shakes things up. He makes you want to go to the movies. This very rock’n’roll acknowledgement includes a screening of the film on the beach followed by a party with special guests list. Do you remember feeling electroshock listening to its hilarious dialogue at the screening of this mad movie? In the Lumiere amphitheatre, each person in the audience knows the magnitude of this rare privilege of being one of the first thousand people to see these artists work.

It was a great pleasure to see Saint Laurent film. Its bizarre life story, evolved genus and masterpieces that some stars wore proudly on the Palais stairs sheathed in red carpet. Some of these films educate, tell a story where others are meant to entertain. No matter their purpose we are all affected and united by the freedom of reflection, romance, fun, history but foremost its artistry.

There is so much dazzle, elegance and emotion on every corner.  Beautiful weather permits the parties, galas and events to be filled with top stars, beautiful fashion, elegance vibrant energy. This is also a great time for a spectator like me to relax by the beach, breath, enjoy delicious food, brake all the sweet rules and observe the whole big screen action from a distance.  And when it all got overwhelmed I was admiring more shining beautiful stars in the sky.

A friend like Sylwia Wiesenberg is good to have. She is best known for her Tonique Fitness body work, but she is also gifted Chef. She essentially unites creative mind, brings people together by making healthy comfort food and letting all alliances work themselves out.

I fashioned myself as her assistant for a day proving to coincide my “gourmet phile” for this special treat. We whipped ostrich egg into a delicious omelet adding some sautéed ramps and seasonal fresh micro greens.

Ostrich egg is the equivalent of about 2 dozen chicken eggs. Its health benefits are greater than some of those found in chicken eggs. It weighs between 3-6lb. They are significantly lower in cholesterol than chicken eggs and have larger amounts of polyunsaturated fatty acids. A single ostrich egg has 2,000 calories but you need to divide it by 24 (chicken egg equivalent) scoring total of 83 calories per serving, which is only six calories higher than a chicken egg.

We garnished it with ramps, micro greens, radish, fresh stone crab tossed with olive oil, and fleur de sel for even better flavor. (You can also use Himalayan pink salt)Unknown
Every element in this fresh, clean-tasting dish is rich in minerals, proteins, low cholesterol, and its much airier in taste then your ordinary chicken egg omelette.

RECIPE
Use 1 Ostrich egg, whisk it throughly. Melt 1 tbs of organic/natural cow grass fed butter on small heat mixed with olive oil. (I recently discovered ghee which gives a lot of flavor when you sauté your veggies and its Sooooooo delicious ) Add ramps and sauté them for few minutes tossing them throughly. They almost immediately shrink in size. Add whisked ostrich egg liquid and and mix all together. Cook for few minutes constantly flipping it.
Serve with your favorite greens, and veggies. Add smoked salt, and paper to complete this delicious dish.

Hands on Ostrich Frittata omelette Tuscan style gets served

No need to travel to Italy when Italy comes to your kitchen!  Recently I have been on cooking spin. What can I say? Once you cooked you are hooked. One thing is sure. It becomes part of your every day routine and plays major part of everyone’s around well being.

Even though its not always turning perfect the piece of mind I get from it rewards my serendipity. I savor at multiple course gourmet lunch with a big help from Sylwia Wiesenberg who always makes it easy and delicious.

RECIPE    

Serves 10

Ingredients:

1 ostrich egg

2tbs of extra virgin olive oil

1 tbs of cows grass unsalted fed butter

1 bunch of ramps

2 large tomatoes

Salt, peper

Sautee ramps on small heat with olive oil and butter.  Add some tomatoes. Stir well for few minutes until ramps start to shrink in size. Pour the egg liquid mixture to the pan and gently shake it.  Leave it for few minutes on the small heat until the consistence saddles down. Pre-heat the oven to 375F. Bake it for 15-20minutes.  Serve with your favorite seasonal micro greens, radishes, and salads.

1 Young Coconut (pour the water out and scoop out yummy coconut meat)

1 Champagne or 1 Atkins mango

1/2 frozen banana

For the sweeter taste I like to add 1 tbs of agave (or stevia) + boost my immune system with 1 tbs organic SAIGON cinnamon.
